The New Gastronome is an online magazine, brought to you by the University of Gastronomic Sciences of Pollenzo, and it’s the result of our creative engine – a rotating team of professionals that include our alumni and students – coming from all over the world, who shine a light on the individuality and uniqueness of food and wine.
This special wine edition of The New Gastronome was created to give you a sip – a taste – of a new vinicultural world ready to be talked about. It is our goal, with this edition, to showcase, not only the traditional methods of winemaking but to challenge some of the existing, more conservative views by introducing diverse global wine cultures, new ideas and unconventional trends that might lead into a future outside of rigid rules and purist pairings.
