The New Gastronome is an online magazine, brought to you by the University of Gastronomic Sciences of Pollenzo, and it’s the result of our creative engine –a rotating team of professionals that include our alumni and students– coming from all over the world, who shine a light on the individuality and uniqueness of food and wine.
This special culinary edition of The New Gastronome was created to showcase a different way of looking at gastronomy. It gives you a taste of some of the scientific processes fermenting underneath the surface, combining culinary creativity and analytic thinking.
